Chicken Paella

Instructions
- Dice the onions, peppers, and mushrooms
- Remove fat from the chicken and cut into approximately 2 cm cubes
- Crush the garlic
- Heat a pan on high heat
- Add the onions, peppers, and garlic
- Cook until they begin to soften, stirring often
- Add the chicken, cooking for approximately 1 minute on each side or until they change color
- Add the mushrooms, diced tomatoes, rice, and chicken broth
- Add the spices and mix thoroughly
- Bring to a boil
- Simmer and cover
- Stir occasionally
- Once the rice is fully cooked and the chicken broth is mostly absorbed, cook for a few minutes uncovered
- Remove from heat and serve
